Maple-Shortbread-Cookies

These delicious shortbread treats, made with Nature’s Path Crunchy Maple Sunrise® Cereal, are a fantastic gift for visitors as you welcome them in for the holidays.

Crunchy Maple Shortbread Cookie Recipe

Prep Time:  5 minutes

Cook Time: 20 minutes

Makes: 48 cookies

Ingredients:

1 cup unsalted butter, softened

1/2 cup icing sugar

1/4 cup granulated sugar

1 tsp vanilla extract

1/4 tsp salt

2 cups all-purpose flour

1/2 cup Nature’s Path Crunchy Maple Sunrise® Cereal

1 lb bittersweet chocolate, melted (optional)

Directions:

Using electric beaters, beat butter with icing sugar, granulated sugar, vanilla and salt until light and fluffy. Mix in flour just until combined. Fold in cereal.

Divide dough in half and shape into 2 logs, about 7-1/2 inches long and 1 1/2-inches in diameter. Wrap each in plastic wrap; refrigerate for 1 hour or until firm.

Preheat oven to 300°F. Line 2 baking sheets with parchment paper. Cut each log into 1/4-inch slices and place 1-inch apart on the prepared baking sheets.

Bake, in batches, for 15 to 20 minutes or until lightly golden on the bottom. Cool completely on a rack.

If desired, dip half of each cookie into melted chocolate. Place on parchment lined baking sheet and refrigerate for 20 minutes or until firm. Store in airtight container for up to 1 week or freeze for up to 1 month.

Mediterranean Mason Jar Salad Recipe

Mason jar salads are 2015’s latest on-the-go trend for a healthy and quick lunch. Salads packaged in Mason jars are portable, easy to make, can be prepped in advance and offer a wide variety of recipes.

Luke Saunders, founder of Farmer’s Fridge, a new healthy vending kiosk concept, offered me his Mediterranean Mason Jar Salad recipe. It looks amazing and will stay fresh and crisp in the office fridge when I bring it for lunch.

 

 

FARMER’S FRIDGE MEDITERRANEAN SALAD RECIPE

Dressing:

  • Red Wine Vinegar – ½ cup
  • Water – 3 ounces
  • Olive Oil – 6 ounces
  • Honey – 2 tsp.
  • Dijon Mustard – 1 tsp.
  • Salt – ½ tsp.
  • Black Pepper – ¼ tsp.
  • Oregano – 1 tsp.
  • Basil – ½ tsp.

Salad:

  • Artichokes (canned) – 4 quarters
  • Grape Tomatoes (sliced in half) – 2 each
  • English Cucumbers (quartered and thinly sliced) – ¼ cup
  • Cannellini Beans (canned) – ¼ cup
  • Parmesan Cheese (grated) – 1 Tbsp.
  • Kalamata Olives (sliced) – 2 Tbsp.
  • Mixed Greens – 1.5 cups
  • Pine Nuts (roasted) – 1 Tbsp.

Start by layering the quartered artichokes followed by grape tomatoes, English cucumbers, cannellini beans parmesan, Kalamata olives, mixed greens and pine nuts. To make the dressing, whisk together the red wine vinegar, water, honey, Dijon mustard, salt, black pepper, oregano and basil in a medium size bowl. While you are still whisking slowly pour in the olive oil. Dressing can be stored in a 2 ounce portion cup on top of the salad.

No Bake Spiced Cheesecake Bars

I’m so excited to share this easy-to-make No Bake Cheesecake Bar recipe. Thanks to my friends at Nature’s Path for sending it my way.

No Bake Spiced Cheesecake Bars Recipe

Combining fresh orange zest with the delicious crunch of a Coconut Chia Granola crust in these cheesecake bars. Add a little more zest to the top if you’re in love with the burst of flavor.

Prep Time: 10 minutes

Cook Time: 12 minutes

Makes: 24 servings

Ingredients

2 cups Nature’s Path Chia Plus™ Coconut Chia Granola

1/4 cup brown sugar

1/4 cup melted butter

2 pkg (250 g) brick style plain cream cheese

3/4 cup plain Stonyfield Organic Low Fat Plain Greek Yogurt

2/3 cup sweetened condensed milk

2 tsp finely grated orange zest (approx.)

Directions:

Preheat oven to 350°F. Line a 9-inch square metal baking pan with parchment paper; set aside.

Add granola to a food processor and pulse until finely ground. Add brown sugar and butter; pulse until combined. Press crumb mixture into prepared pan. Bake until firm about 12 minutes. Cool completely.

Meanwhile, with electric beaters, beat cream cheese with yogurt, sweetened condensed milk and orange zest until smooth. Spread mixture over crust; smooth top.

Refrigerate for 6 or up to 24 hours or until firm. Garnish with extra orange zest, if desired. Cut into bars and serve.
